ZARZA / GESHA
FincaZarza is located in the highlands of Bruselas, Huila, where fertile volcanic soils and diverse microclimates create ideal conditions for cultivating exceptional coffee.
Surrounded by native trees, the farm benefits from natural shade that slows cherry maturation and enhances flavor complexity.
The Zarza family has cultivated coffee for generations, guided by a philosophy that blends tradition with innovation. Their commitment to biodiversity, careful agronomy and precise post-harvest practices ensures that each lot expresses both varietal character and a strong sense of place.
Step 1 — Cherry Selection
Ripe cherries are carefully selected to ensure optimal sweetness and quality before processing begins.Step 2 — Anaerobic Fermentation (24 hours)
The selected cherries undergo anaerobic fermentation for 24 hours, promoting controlled microbial activity and the development of floral aromatics and juicy fruit characteristics.
Step 3 — Floating & Controlled Oxidation (12 hours)
The cherries are floated to remove defective or low-density fruit and then placed in bags for 12 hours of controlled oxidation, encouraging complexity and greater fruit expression.
Step 4 — Must Recirculation
During fermentation, the naturally produced coffee must is collected and recirculated through the coffee mass. This keeps the cherries in contact with the fermentation liquid and promotes a more uniform fermentation environment, contributing to greater aromatic intensity and complexity.
Step 5 — Thermal Shock
The coffee undergoes a controlled thermal shock, creating a rapid change in temperature that interrupts or regulates fermentation and helps stabilize the characteristics developed during the previous stages.
Step 6 — Sun Drying in Marquesinas (10–12 days)
Finally, the coffee is slowly dried for 10–12 days in parabolic dryers (marquesinas), allowing controlled and even dehydration while preserving its aromatic complexity and juicy character.Customers who purchase whole bean coffee should be aware that the product is non-refundable. It is also important for customers to cancel their purchase before the product is shipped if they wish to do so. Once the coffee has been shipped, cancellation is no longer possible. This policy is designed to ensure that customers receive the freshest coffee possible and that the company can continue to meet the high standards of quality that their customers expect.
