Wilder Lazo`s family is made up for a group of passionate coffee producers, they are in San Adolfo (Huila). Throughout years, they have faced many challenges to achieve their dreams. After a devastating fire, they left their farm, but because of father determination, they came back to rebuild their crops and the entire farm.
The whole family is involved in coffee production. Mom finds joy, gardening, while kids specialized in different aspects of the business from drying, processing and commercialization. They turn their farm into a platform for specialty coffee, with exceptional and exquisite flavors and aromas.
Despite the hard time they never gave up. Their dedication and passion have allowed them to provide a way of living and education for their children`s better future. Now the entire family continue this legacy, making sure Wilder Lazo`s coffee be distinguished among many strict palates.
Wilder Lazo`s history it`s a reminder of the importance of perseverance and working hard with a love. His farm is a charming place where they cultivate specialty coffee. Being that the result of an entire family effort and passion.
1. Selection
Phase 1: Beans are selected with a Brix level above 25 degrees.
Phase 2: A floating process is used to discard dry and immature beans.
2. Fermentation
Phase 1: Beans are placed in sealed bags for 80 hours in cherry. During this period,
mucilage is released and collected in the bag's lower part. After 80 hours, the beans are
transferred to tanks and submerged in their own mucilage.
Phase 2: Beans are sealed in tanks without CO2 for 120 hours. The pH is controlled to stay
above 5.5, and the temperature is maintained between 12-14°C.
3. Drying
Beans are dried in a marquesina (drying shed) for 20 to 30 days under shade to control the
amount of sunlight exposure. This slow drying process continues until the beans reach
10.5% moisture content.
4. Stabilization
The dried beans are stabilized for 30 days packed in GrainPro bags.Customers who purchase whole bean coffee should be aware that the product is non-refundable. It is also important for customers to cancel their purchase before the product is shipped if they wish to do so. Once the coffee has been shipped, cancellation is no longer possible. This policy is designed to ensure that customers receive the freshest coffee possible and that the company can continue to meet the high standards of quality that their customers expect.

However, delivery times vary depending on the destination and chosen delivery method, so we cannot guarantee a specific delivery date. Once the payment is completed, we will schedule your order for the next roasting day. After roasting, we will ship your coffee.
