1. Selection Phase 1: Beans are selected with a Brix level above 25 degrees. Phase 2: A floating process is used to discard dry and immature beans. 2. Fermentation Phase 1: Beans are placed in sealed bags for 80 hours in cherry. During this period, mucilage is released and collected in the bag's lower part. After 80 hours, the beans are transferred to tanks and submerged in their own mucilage. Phase 2: Beans are sealed in tanks without CO2 for 120 hours. The pH is controlled to stay above 5.5, and the temperature is maintained between 12-14°C. 3. Drying Beans are dried in a marquesina (drying shed) for 20 to 30 days under shade to control the amount of sunlight exposure. This slow drying process continues until the beans reach 10.5% moisture content. 4. Stabilization The dried beans are stabilized for 30 days packed in GrainPro bags.
