Beginnings
The Nogales Group is a project with family roots that celebrates the sense of community with everyone who chooses to become a part of this project.
Offering authentic experiences, we treat our people and the planet with care & empathy while we build and redefine what it means to be coffee producers.
With a rich history as a traditional coffee farm, notably winning CoE in 2005, we have continued to innovate and question the future image of a coffee farm.
Present
Now 20 years later we still continue to develop ourselves with more control of our fermentation processes; the release new innovations such as our US Brewers Cup winning, 100% farm made decaf and our own tisane made from ground coffee cherry. Traveling to share and learn from other origins, developing our soil management protocols and constantly questioning how we can improve in all areas and remain leaders in our industry.
Niebla
This year, after much searching for the perfect climate we were finally able to purchase a new farm, Niebla. Sitting at up to 2150 meters above sea level we have been working to plant this farm with exceptional varietals such as Geisha Panama & Typica Mejorado to offer our most exclusive and luxurious coffees to date.
We have also taken the step to control dry milling at our farm with the installation of our own fit for purpose facility. It is a great milestone for us, now being able to control every step of our coffees journey to deliver the best artisan product to our customers 100% produced at the farm.
Our Tabi is located in one of the lower parts of Finca Los Nogales, at 1,600 masl, where we have found it to adapt well. This small lot of just 2,000 trees produces around 2,000 kg of coffee, which we divide between the Red Fruit Passion and Calm flavor profiles.
* Coffee pickers focus on harvesting only the ripe cherries from the coffee plant. This ensures that the coffee beans achieve the highest quality.
*The harvested cherries undergo a cleaning and disinfection process using treated water.
*The coffee beans are submerged in water, and due to their different densities, the ripe and defective beans will float while the high-quality beans will sink. This allows for a more precise selection.
*Cherry was bathed in 90C water for 60 seconds, our longest protocol, to pasteurize the coffee & release additional sugars for fermentation.
*Depulping dry in modified depulper to squeeze and gain all the juice from the coffee used in the fermentation.
*7 days of fermentation in its own sugars, extracted from the coffee cherry skin during depulping, along with a ratio of 1 part pre-fermented coffee yeasts to 4 parts of this juice. These pre-fermented yeasts — microorganisms recovered from the coffee must, clarified and preserved using beans from the same variety— help drive a high-quality fermentation while preserving the terroir.

Customers who purchase whole bean coffee should be aware that the product is non-refundable. It is also important for customers to cancel their purchase before the product is shipped if they wish to do so. Once the coffee has been shipped, cancellation is no longer possible. This policy is designed to ensure that customers receive the freshest coffee possible and that the company can continue to meet the high standards of quality that their customers expect.
We use Swiss Post and delivery usually takes 1 to 3 working days. However, delivery times vary depending on the destination and chosen delivery method, so we cannot guarantee a specific delivery date. Once the payment is completed, we will schedule your order for the next roasting day. After roasting, we will ship your coffee.
