Beginnings

With a rich history as a traditional coffee farm, notably winning CoE in 2005, we have continued to innovate and question the future image of a coffee farm.
Present
Now 20 years later we still continue to develop ourselves with more control of our fermentation processes; the release new innovations such as our US Brewers Cup winning, 100% farm made decaf and our own tisane made from ground coffee cherry. Traveling to share and learn from other origins, developing our soil management protocols and constantly questioning how we can improve in all areas and remain leaders in our industry.
Niebla
This year, after much searching for the perfect climate we were finally able to purchase a new farm, Niebla. Sitting at up to 2150 meters above sea level we have been working to plant this farm with exceptional varietals such as Geisha Panama & Typica Mejorado to offer our most exclusive and luxurious coffees to date.
We have also taken the step to control dry milling at our farm with the installation of our own fit for purpose facility. It is a great milestone for us, now being able to control every step of our coffees journey to deliver the best artisan product to our customers 100% produced at the farm.
Coffee cherries are hand-picked at peak ripeness to ensure optimal sugar concentration and uniformity. At the processing station, the cherries undergo cleaning, mechanical density sorting, and removal of floaters and defective cherries. Only dense, fully ripe cherries continue to processing. The cherries are then depulped, separating the coffee beans from the fruit. The resulting pulp and mucilage are mechanically pressed to obtain a juice rich in sugars and fruit compounds. This juice is fermented under controlled conditions to produce coffee mosto, which is carefully stored for the later reinfusion stage.
The coffee is dried on traditional raised beds until it reaches a stable moisture level. It is then transferred to our on-farm dry mill, where the parchment layer is removed to obtain green Excelso coffee beans for decaffeination.
The green coffee beans are immersed in hot water for several hours. This process is repeated twice, allowing caffeine to be gradually extracted from the beans without the use of synthetic chemical solvents.
Following decaffeination, the coffee beans are immersed in fermented coffee mosto for approximately 24 hours. During this stage, the coffee absorbs aromatic compounds developed during fermentation, helping restore sweetness, body, and complexity while maintaining a balanced cup profile.
After reinfusion, the coffee is transferred to our dedicated decaf drying station. Because decaffeinated green coffee no longer has its natural protective layers, it is more sensitive to fluctuations in temperature and humidity. The coffee is dried on enclosed African raised beds inside a specially designed facility that allows natural sunlight to enter while maintaining controlled airflow. During periods of high humidity or limited sunshine, a dehumidification system is used to ensure consistent drying conditions. This carefully managed process promotes uniform moisture reduction and preserves the coffee's quality. Drying continues for approximately five days, or until the coffee reaches its target moisture level.
The coffee is packed in GrainPro bags and transferred to our climate-controlled storage facility. Storage conditions are maintained between 16–19°C and approximately 30–35% relative humidity to preserve quality and ensure long-term stability prior to export. Every stage of this process is carried out entirely on our farm
Customers who purchase whole bean coffee should be aware that the product is non-refundable. It is also important for customers to cancel their purchase before the product is shipped if they wish to do so. Once the coffee has been shipped, cancellation is no longer possible. This policy is designed to ensure that customers receive the freshest coffee possible and that the company can continue to meet the high standards of quality that their customers expect.
We use Swiss Post and delivery usually takes 1 to 3 working days. However, delivery times vary depending on the destination and chosen delivery method, so we cannot guarantee a specific delivery date. Once the payment is completed, we will schedule your order for the next roasting day. After roasting, we will ship your coffee.
