At an altitude of 1450-1550 meters above sea level, on our lovingly tended finca in Antioquia, our fine Arabica beans of the “Castillo” variety thrive. Here, where the air is clear and pure, they grow under the careful supervision of our passionate team. We are particularly proud that no chemical substances are used on our entire finca, which means that our entire production is 100% organic, sustainable, and in harmony with nature.
The whole cherries unfold their full potential in an exciting fermentation process: first in sacks for 24 hours in the warm mountain air (aerobic), then another day without oxygen (anaerobic) in our fermentation vessels.
The whole cherries are then gently dried by the Colombian sun for three weeks. During this process, they absorb the warmth and energy of Antioquia, which is later released into your cup.
